Bone-In Barbeque is back in a big – and permanent – way. Chef Scott Hall, owner of Scott Hall Catering and the Bone-In Artisan BBQ on Wheels food truck (featured in GQ and Smithsonian magazines as well the Cooking Channel, Bravo and the Travel Channel) announces a new brick-and-mortar location for Bone-In Barbeque, bearing the distinction of being the first restaurant to locate in the growing BullStreet neighborhood.
Bone-In Barbeque will be located in the historic Ensor Research Laboratory building, adjacent to the entry plaza of Spirit Communications Park (home of the Columbia Fireflies Minor League Baseball team), with roll-up garage doors and a large outdoor patio where guests can meet up for a local beer or craft cocktail before and after games. Barring any unexpected delays, Bone-In Barbeque anticipates opening its doors in Spring 2018.
At 3,600 square feet, the casual dining restaurant will feature a sizable bar with a formidable cocktail program – a departure from the typical Southern BBQ restaurant – with relaxed indoor seating and a spacious outdoor patio that extends out on the ballpark plaza. A private dining room is planned to accommodate 15-20 guests for intimate group dinners, small receptions and business meetings.
“This is a unique opportunity to locate in the heart of BullStreet, where we can offer guests a comfortable environment combined with a delightful, unassuming culinary experience,” says Chef Scott Hall, owner of Bone-In Barbeque. “Our vision is to create a relaxed destination restaurant that will draw people from across the Midlands to stop in for lunch, happy hour, dinner, and eventually, brunch on the weekends.”
A Midlands native, Chef Scott Hall cooked for a decade in New York City, where he earned a spot in the kitchen at acclaimed restaurant Prune and went on to co-found a full-service catering company before returning to South Carolina in the late 2000s. After launching the Bone-In Artisan BBQ on Wheels food truck in 2010, Hall appeared on the Cooking Channel television shows, “Man Fire Food” and “Eat St.” which also was aired on Food Network Canada and Food Network Europe, as well as the Travel Channel’s “BBQ Crawl” and Bravo’s “Newlyweds.
His work was recognized in GQ and Smithsonian magazines, as well as a wide array of Midlands and S.C. press outlets. Hall set his focus in recent years on growing Scott Hall Catering, for which Hall will utilize the commercial restaurant kitchen at Bone-In Barbeque to increase capacity and expand operations.
Scott Hall Catering is a full-service catering firm known for its weddings and special event work such as the Columbia Museum of Art gala 2017; galas and employee events for Palmetto Health and BlueCross BlueShield of South Carolina; the wedding of ABC Columbia anchor Alicia Barnes; the CVSC Green Tie Luncheon, and the passed hors d’oeuvres at the 2016 Gervais St. Bridge Dinner. Chef Hall is the founder of the X Marks the Spot pop-up dinner series, known for its outside-the-box creative themes and boundary-breaking, performance-based dinner experiences. Hall also co-owns and operates Corley Mill House and Garden in Lexington with his family.
“Our roots run deep in Columbia, and we want to blend our heritage into the transformation of BullStreet to create an authentic local dining experience that will make Columbia and all of South Carolina proud,” notes Hall.
While more formally composed meals will be available, the menu at Bone-In Barbeque will feature fan favorites such as smoked, pulled pork served on scratch-made focaccia buns; smoked brisket-stuffed mac and cheese; fresh-fried Bone Chips smothered in brisket chili with pepper jack and scallions; and baby arugula salad with smoked hickory-hoisin brisket and feta.
Guests can choose from a la carte proteins such as ribs, brisket, pork, fried oysters and fried chicken – as well as vegan pulled jackfruit – along with indulgent side dishes such as salt & vinegar fried Brussels sprouts, white corn Tex-Mex succotash, and a grilled mac and cheese slice. Those wishing to go all-in can opt for meals such as pulled pork with blue cheese and sweet onion bread pudding, blackened catfish with jalapeno remy, or Lobster 3 Ways: a baby lobster pot pie, a lobster fritter, and a perfect little lobster club sandwich. Entrees will be served on metal quarter-sheet pans covered in tan butcher paper, garnished with fresh herbs and house-made sauces.
The featured house cocktail at Bone-In Barbeque will be a frozen grasshopper, made with creme de menthe, creme de cacao, vanilla vodka and ice with a shaved chocolate garnish, served in a mason jar in homage to the Columbia Fireflies baseball team next door. A light, thirst-quenching play on a forgotten classic cocktail, this is not your grandmother’s dessert drink.
The Ensor Building is located in the geographic center of BullStreet, adjacent to the First Base Building, the largest private office building built in Columbia since 2009 – currently home to companies such as Ogletree Deakins Law Firm, Founders Federal Credit Union, and TCube Solutions. The SOCO cowork and event space is located one block away, and 28 townhomes are planned at TownPark at BullStreet nearby. It is estimated that a total of 5,300 employees work within a 10-minute walk, creating a built-in customer base for Bone-In Barbeque.
The historic Ensor building is undergoing renovation by Buchanan Construction Services and Studio 2LR Architecture + Interiors, with some design inspiration from 4240 Architecture in Denver, CO. “The BullStreet neighborhood is on its way to being a destination for all Columbians and tourists, and we’re thrilled to be a part of the construction process,” says Davis Buchanan, president of Buchanan Construction Services. “The new restaurant and remodeled office space are going to be a great addition to BullStreet.”
“The Ensor building has a great deal of historic character both inside and out,” notes Wes Lyles, president of Studio 2LR Architecture + Interiors. “With its proximity to Spirit Communications Park and the First Base Building, it is ideally located for a vibrant restaurant.”
With the more than 300,000 visitors to Spirit Communications Park in the first year, Bone-In Barbeque will be a unique dining destination for park visitors as well as others throughout Columbia. The stadium is open as a public park daily from 7:00 a.m. until dark when there is not an event, and many Columbia residents will now be able to enjoy a cold beverage after running the stairs or doing a few laps on the 1/3-mile walking and running loop around the concourse.
The restaurant will be a part of the overall 181-acre BullStreet neighborhood, separate (but a stone’s throw) from the restaurant, retail and entertainment offerings at the 31-acre Commons at BullStreet development, which is being actively marketed by separate developers. The neoclassical Ensor Building, built in 1939 and home to the Ensor Research Foundation, was not included in original plans to save five of BullStreet’s historic buildings; the count on buildings to be saved at BullStreet is now up to nine structures.
